I recently received a 7.25 qt Le Creuset dutch oven in palm as an early Christmas gift. Beautiful dutch oven! So, I purchased this cookbook to get started on using this pot. I can't cook but I can follow a recipe. I've already tried three recipes -- simple pot roast (best-ever pot roast), creamy mashed potatoes (got lots of compliments), and the easy black bean soup (simple yet flavorful)! Today, I plan to make the weeknight pasta bolognese. I plan to try many more recipes -- directions are clear, no long lists of ingredients, and beautiful pictures! I love cooking with my new dutch oven! Initially, I thought the pan was too big, but once I actually began using it, I realized that the large size was very beneficial -- more cooking surface, no food spilling out. I'm sold on the dutch oven and on this cookbook!
They don’t always get it right with the cookbooks but this is yet another high quality and well presented cook book from the Test Kitchen. Diverse set of recipes and I really like the “why this works†blurb at beginning of each because it is interesting and because if I need to deviate due to ingredient missing or time pressure I am able to better judge what will best work as I proceed or diagnose went wrong if I have a failure.My wife thinks there are too many ingredients needed for the recipes so I’ll record her input here but I disagree with her on this point. There are plenty of choices for the more adventurous cook but at least 50% I would characterize as pretty straight forward.I have a minor but consistent problem with some types of recipes that I thought might be due to fact that I am at 5000ft elevation and recipes developed at test kitchen near sea level. I contacted the test kitchen and got a nice, personalized email back from Jack chock full of relevant information from some high altitude work they had done.
Over the 15 or 20 years since I got my Dutch oven, I've often said that it's the single cooking pot that I truly need. I can do anything I need to do with it. (I've also said that anyone who wants it can fight me for it.) I've gotten pretty good at doing lots of different things with it from making bread and soup, to making roasts, stews, and casseroles. But this is the first time I've ever had a cookbook devoted entirely to cooking with a Dutch oven, and I think it's worth having.First off, don't skip the Getting Started section in which the pot is described, and a cross section of available Dutch ovens currently on the market are compared. While I suspect this section will age poorly because of changes in market value and innovation, it's still highly informative even for someone who has had a Dutch oven for a while. It also describes the different cooking techniques that can be used with the oven, and gives tips on how to do it right, and why it works the way it does. Again, even if you're a long-time user of the Dutch oven, you can benefit from reading this section. Finally there are cleaning techniques, and I plan to use the bleach one to clean the interior of my oven which has discolored over the years. Who knew you could bleach enamel?Then there are the recipes, and there are some amazing ones included. There are one pot meals like a chicken pot pie with the crust baked on the inverted oven lid, one pot pastas with sauce, Asian-inspired dishes, meats, fish and vegetable dishes. There are soups like classic tomato, navy bean, and New England clam chowder. There are stews and chilis, a big section of roast and braise recipes, side dishes, fried foods, desserts, and breads. It shows the versatility of the Dutch oven pretty comprehensively.The recipes aren't overly fussy, and in each case there's a "Why it works" section that explains the ideas behind and techniques used in the dish. Where substitutions are possible, they are suggested. They seem to prove that I was right all those years ago when I started saying the Dutch oven was the only cooking pot I would ever truly need. Don't get me wrong, I like my other pots and pans, I like my gadgets, but in the end, if I could save only one item from my kitchen, my Dutch oven would be it.This cookbook has expanded my horizons of use, and I love it. My first response was to start a shopping list and write "Buy ALL THE FOOD!" at the top. Then I calmed down. But in an era of gimmicky cookbooks, something this direct and inclusive is very welcome.
I love to cook, predominantly in my Instant Pot and Dutch Oven. I adore one-pot cooking, since time and energy are something I'm short on often.I have other cookbooks I turn to a lot. Including books from ATK.But this one just doesn't call to me.Maybe the recipes aren't "down to earth" enough for me, as one reviewer put it.I typically like really good foods that are hearty and classic. I can do some interesting things, but they still have to be pretty simple given my lifestyle at moment.I find myself not wanting any of the dishes or not having the energy to go about doing them because they seem to complicated or to require ingredients I'd have to get especially for a particular recipe but would not otherwise have on hand.So I guess for me the book is not simple or easy enough to produce star dishes. I haven't done one recipe from it.I would pass on this one.There are so many other cookbooks that speak to me such as Martha Stewart Living's One Pot: 120+ Easy Meals from Your Skillet, Slow Cooker, Stockpot, and More, which has a great Dutch Oven section.NOTE: This book came to me completely damaged. I see from other reviews that the binding is not very good, which may have factored into that
